Place all ingredients in your Instant Pot. Select the stew/meat setting for 35 minutes.
Meanwhile, preheat your oven to 400. After the stew is done in the Instant Pot, let it be for 10 minutes, then release the rest of the steam. Now, pour the stew into an oven-safe baking dish, place it in the oven, uncovered for 12-15 minutes. This helps caramelize the meat an thicken the gravy.
You can enjoy this over crusty, toasted sourdough bread, hot buttery egg noodles, over creamy polenta or just on its own. It is fabulous!
